How to cost a recipe correctly

  1. 1. Price every ingredient as purchased. Use the delivered cost per kilogram from your latest invoice, including transport if your supplier bills it separately.
  2. 2. Add the costs that are not food. Labour hours for the batch, casings and packaging, energy for smoking, cooking or drying chambers. Ignoring these is what makes a product look profitable on paper and lose money in practice.
  3. 3. Measure your yield, don't guess it. Weigh a batch in and out. Fresh sausage may hold close to 100%, a cooked ham typically lands near 80%, and a dry-cured salami often finishes between 60% and 70%.
  4. 4. Price from margin, not markup. Decide the gross margin the business needs, then let the price follow from the cost. Mixing up markup and margin systematically under-prices your range.
  5. 5. Re-cost when inputs move. Meat prices move faster than menus. Re-running the numbers monthly catches erosion before it reaches the year-end accounts.

How do you calculate food cost?

Add every ingredient line (quantity × cost per kg), then add labour, packaging and overhead to get the total batch cost. Divide that by the finished weight — the weight left after cooking, drying or trim loss — to get cost per kg. Dividing by raw weight instead is the single most common costing mistake, because it hides yield loss.

What is a good food cost percentage?

Most food businesses target 25–35% food cost on the selling price, which corresponds to a 65–75% gross margin. Cured and dried products often sit lower in percentage terms because long ageing losses are already priced in through the yield figure.

What is the difference between margin and markup?

Margin is profit as a share of the selling price (price = cost ÷ (1 − margin)). Markup is profit as a share of cost (price = cost × (1 + markup)). A 50% markup is only a 33% margin. This calculator uses margin.

Why does yield matter so much in meat costing?

A dry-cured product can lose 30–40% of its weight during ageing, and cooked products lose water too. If you cost against raw weight you under-price every pack by the same percentage. Enter your measured yield so cost per kg reflects sellable weight.
